40 Days Blog: Fruit Feast Recipe #1

Avocado, Cucumber & Tomato Salad

1 Large Avocado, diced
1 Medium Cucumber, peeled, deseeded and cut into half-moons
1 Handful of Cherry or Grape Tomatoes, halved  
Olive Oil, Salt & Pepper, to taste

Place fruit into bowl. Top with olive oil, salt & pepper, if using. Stir. 

Sit down and enjoy.
